The professions is my biggest hang up with JP and I thought if I had a conversion chart, I'd have a better idea what to make someone roll in a given situation. Here's what I came up with on my own, thoughts?
Aristocrat > Contacts, Empathy, Provoke, Rapport
Engineer > Crafts, Resources Explorer > Athletics, Drive, Notice
Fighter > Fight, Physique, Shoot
Scholar > Investigate, Lore, Will
Scoundrel > Burglary, Deceive, Stealth

That's a pretty decent list, yes. I wouldn't put Resources under Engineering, though. Resources doesn't belong to any profession. Remember that with professions it's more about how you do things, not what you do. Bribing an official to get a zoning permit approved is Aristocrat, while bribing a bouncer at an underground fighting ring would be Scoundrel.

Notice would fall under scholar, not explorer. Resources would be covered by assets(either temporary or permanent), it is not part of any specific profession. Otherwise it looks fine.

If you want to get rid of professions and go with a more specific skill list, I wouldn't try to convert them. We didn't convert skills into professions when we created them, so they won't be cleanly reverse engineered that way. We came up with the core things that players do in the game, ignoring Fate Core's skill list altogether, then grouped them thematically.
If you want to go with skills, I would recommend just going with skills. It won't break anything.
